Farm
The six acres surrounding our family farmhouse are largely forest. You can wander through the woods and, depending on the season, pick wild berries or mushrooms. On the cultivated part of the land we grow vegetables, keep fruit trees and chickens, and tend a large strawberry field. A little farther from the house, we also cultivate several olive groves.
As a family, we focus on living and eating healthily, so we don’t use pesticides on our crops or trees. And yes—this means that every season at least one crop fails. But there is always another that thrives, and that is the beauty of nature. If a problem can’t be solved naturally, we simply let the plants be.
Until the 1970s, the Fabbri family also tended vineyards on the property, in the woods. The vines are now completely overgrown and reclaimed by the forest, but the outlines are still visible. One day, we would love to bring back the Colombana grape, which grows so well in this area.
Strawberries
We are proud to have brought the Dutch variety Lambada to our Italian farm. This strawberry is wonderfully sweet, with a pleasantly soft texture. Lambada is a distinctive strawberry for true gourmets and is especially well suited for bakeries and restaurants—who make up most of our clients. Locals also head to the two shops in Chianni as soon as our strawberries arrive. If you stay with us in the right season (April–May), you are more than welcome to come and taste our beloved strawberries.
Olives
Our 800 olive trees grow across several fields around the farm. A blend of four varieties—Frantoio, Leccino, Moraiolo, and Pendolino—gives our oil its balanced taste and aroma.
- Frantoio is known for intense fruity notes of artichoke and green almonds, with a persistent, peppery finish, and is prized for producing high-quality oil.
- Leccino is more delicate and mild, with notes of fresh grass and almonds.
- Moraiolo is rich in polyphenols and antioxidants, contributing its characteristic bitterness to the blend.
- Pendolino is an excellent pollinator for the other trees. With light herbaceous notes, it helps round out the flavour and brings harmony.
Every year the blend tastes a little different, but we are proud to produce a bold yet balanced extra virgin olive oil—and we can’t wait to share it with our guests. For true fans, we offer tastings in our garden.
“La fattoria didattica”
We believe it’s essential to pass traditions on to younger generations—especially those that risk being lost in today’s fast-changing world. That’s why we invite local schools to visit our farm, so children can experience what it’s like to work with crops, soil, and livestock, much as their grandparents once did.
